[Recipes] Easy Party Snacks: Bacon Guac Bombs

Ingredients

For the Guacamole:

  • 2 ripe avocados, peeled and mashed
  • 6 oz cream cheese, softened
  • Juice of 1 lime
  • 1 garlic clove, minced
  • 1/4 red onion, finely chopped
  • 1 small jalapeño, finely chopped (remove seeds for less heat)
  • 2 Tbsp fresh cilantro, chopped
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • Kosher salt and black pepper, to taste

For Assembly:

  • 12 slices bacon, cooked until crispy and crumbled


Instructions

Step 1: Prepare the guacamole in step one.

  • In a big bowl, mix together mashed avocado, cream cheese, lime juice, garlic, red onion, jalapeño, cilantro, cumin, and chili powder.
  • Stir until mostly smooth; some tiny avocado bits are acceptable.
  • Add salt and pepper to taste.
  • To firm the mixture up for rolling, chill it in the fridge for roughly 30 minutes.


Step 2: Create the Snack Bombs

  • On a big platter, scatter the crumbled bacon.
  • Scoop the cooled guacamole blend into bite-sized balls using a little cookie scoop or spoon.
  • Roll the crumbled bacon over each ball until it is uniformly coated.
  • Keep going till all the guacamole is gone.


Step 3: Serve and Store

  • Put completed bites in an airtight container.
  • Keep in the fridge until time to serve. Enjoy it best in 2–3 days.

TIPS
  • Like a more even texture? Mash the guacamole mixture more completely.
  • Looking for more heat? Leave the jalapeño seeds in or sprinkle some hot sauce.
  • Ideal for low-carb party starters or dinner preparation.
