Ingredients
For the Guacamole:
- 2 ripe avocados, peeled and mashed
- 6 oz cream cheese, softened
- Juice of 1 lime
- 1 garlic clove, minced
- 1/4 red onion, finely chopped
- 1 small jalapeño, finely chopped (remove seeds for less heat)
- 2 Tbsp fresh cilantro, chopped
- 1/2 tsp ground cumin
- 1/2 tsp chili powder
- Kosher salt and black pepper, to taste
For Assembly:
- 12 slices bacon, cooked until crispy and crumbled
Instructions
Step 1: Prepare the guacamole in step one.
- In a big bowl, mix together mashed avocado, cream cheese, lime juice, garlic, red onion, jalapeño, cilantro, cumin, and chili powder.
- Stir until mostly smooth; some tiny avocado bits are acceptable.
- Add salt and pepper to taste.
- To firm the mixture up for rolling, chill it in the fridge for roughly 30 minutes.
Step 2: Create the Snack Bombs
- On a big platter, scatter the crumbled bacon.
- Scoop the cooled guacamole blend into bite-sized balls using a little cookie scoop or spoon.
- Roll the crumbled bacon over each ball until it is uniformly coated.
- Keep going till all the guacamole is gone.
Step 3: Serve and Store
- Put completed bites in an airtight container.
- Keep in the fridge until time to serve. Enjoy it best in 2–3 days.
- Like a more even texture? Mash the guacamole mixture more completely.
- Looking for more heat? Leave the jalapeño seeds in or sprinkle some hot sauce.
- Ideal for low-carb party starters or dinner preparation.
