Yields: 16 toasts | Prep Time: 5 minutes | Total Time: 35 minutes

Ingredients

  • 4 oz bacon (about 4 strips), cut into ½-inch pieces
  • 4 slices white sandwich bread
  • ½ cup mayonnaise
  • ½ tsp kosher salt, plus more to taste
  • ¼ tsp freshly ground black pepper, plus more to taste
  • 3 large romaine lettuce leaves
  • 5 super-ripe grape tomatoes
  • ½ ripe avocado

Instructions

Step 1: Cook the Bacon

  • Set oven to 400°F.
  • Lay bacon in a single layer in a chilly big metal pan.
  • Unattended, cook for approximately five minutes under medium heat until one side browns.
  • Stir and heat for another one to two minutes, until crisp.
  • Move bacon to a dish and keep the pan's rendered fat.

Step 2: Prepare the Bread

  • Using a serrated knife, trim crusts off bread slices.
  • Slice each piece into four triangles, or 16 total.
  • On a sheet pan, grease-side up, dip one side of each triangle into the set aside bacon fat.

Step 3: Toast the bread.

  • Toast bread triangles for four to five minutes, or until edges are crisp and gently brown.

Step 4: Prepare the toppings.

  • Combine salt, pepper, and mayo in a small bowl.
  • Cut romaine leaves lengthwise in half and then rip into 2-inch fragments.
  • Cut tomatoes into ¼-inch rounds and then salt them well.
  • Slice avocado into ¼-inch pieces, then horizontally split each piece.

Step 5: Put together the toasts.

On each toast, spread 1 tsp of seasoned mayo.

Top every one with:

  • A leaf of lettuce
  • An avocado slice
  • Two bacon slices
  • A tomato slice
  • Arrange toppings in a somewhat shingled or overlapping manner.
  • Top with some black pepper.

TIPS
  • For best taste, always salt grape tomatoes generously; they provide structure and flavor.
  • Prepare in advance: Up to three days' worth of mayo can be prepared; up to five hours' worth of bacon and bread.
  • For the greatest crunch and freshness, put together immediately before serving.
