[Recipes] Cosmic Brownie Protein Bites – A Grown-Up Take on Your Favorite Childhood Treat

Ingredients:

  • 1/2 cup (48g) almond flour
  • 1/4 cup chocolate protein powder
  • 3 Tbsp (18g) unsweetened cocoa powder (not Dutch-processed)
  • 3/4 tsp kosher salt
  • 1/3 cup almond butter
  • 2 Tbsp almond milk
  • 2 Tbsp maple syrup
  • 1 tsp pure vanilla extract
  • 6 oz dark chocolate (60% cacao), chopped or chips
  • 1 Tbsp refined coconut oil
  • 2 Tbsp mini rainbow chocolate chips


Instructions:

Step 1: Make the Dough

  • In a large bowl, whisk together almond flour, chocolate protein powder, cocoa powder, and salt. Add almond butter, almond milk, maple syrup, and vanilla. Use a rubber spatula to mix until fully combined.


Step 2: Shape into Bites

  • Scoop out heaping tablespoons (about 20g each) and roll into balls. You should end up with 12. Place on a parchment-lined baking sheet. If the dough feels too sticky or soft, freeze for 15 minutes before dipping.


Step 3: Melt the Chocolate

  • In a microwave-safe bowl, combine the dark chocolate and coconut oil. Microwave in 30-second bursts, stirring in between, until fully melted and smooth (about 90 seconds total).


Step 4: Dip and Decorate

  • One at a time, drop each bite into the melted chocolate. Spoon chocolate over the top, then use a fork to lift the bite out, letting excess drip off. Place back on the baking sheet. Let sit for a minute, then sprinkle with rainbow chips before the chocolate fully sets.


Step 5: Chill and Store

  • Refrigerate until the chocolate hardens, at least 30 minutes. Store in an airtight container in the fridge for up to 1 week, or freeze for up to 1 month. Thaw in the fridge before serving if frozen.
