  • 2 orange bell peppers, chopped (any color works)
  • 1 avocado, chopped

Instructions

Step 1: Prepare the Dressing

  • Whisk together olive oil, lime juice, cilantro, spicy sauce, cumin, and salt in a small bowl. Taste and change the seasoning as required.


Step 2: Build the Salad

  • In a big bowl, mix together avocado, bell peppers, tomatoes, red onion, corn, black-eyed peas, and black beans. Drizzle the dressing over the salad and toss until all parts are uniformly coated.


Step 3: Present

  • Pair with grilled meats, spoon over a grain bowl, tuck into a burrito, or serve with tortilla chips.

Storage Tips
  • Keep in the fridge for up to five days in an airtight container.
