Ingredients

- 1 tsp kosher salt
For the Salad:
- 1 cup black beans
- 1 cup black-eyed peas
- 1 cup corn kernels (fresh or thawed frozen)
- 1 small red onion, finely chopped
- 1 cup cherry tomatoes, quartered
- 2 orange bell peppers, chopped (any color works)
- 1 avocado, chopped
- Tortilla chips, for serving
Instructions
Step 1: Prepare the Dressing
- Whisk together olive oil, lime juice, cilantro, spicy sauce, cumin, and salt in a small bowl. Taste and change the seasoning as required.
Step 2: Build the Salad
- In a big bowl, mix together avocado, bell peppers, tomatoes, red onion, corn, black-eyed peas, and black beans. Drizzle the dressing over the salad and toss until all parts are uniformly coated.
Step 3: Present
- Pair with grilled meats, spoon over a grain bowl, tuck into a burrito, or serve with tortilla chips.
- Keep in the fridge for up to five days in an airtight container.
- Though the lime dressing helps to keep freshness, the avocado might darken over time. Best savored fresh.
