Ingredients

  • For the Chips:
  • 2 cups shredded low-moisture mozzarella
  • 1 cup almond flour
  • 1 tsp garlic powder
  • 1 tsp kosher salt, plus more for seasoning
  • 1/2 tsp chili powder
  • Freshly ground black pepper


Instructions

Step 1: Melt the Cheese

  • Set the oven to 350°F.
  • In a heatproof bowl, microwave the shredded mozzarella in 30-second intervals, stirring between each, until melted—about 1 minute 30 seconds.


Step 2: Prepare the Dough

  • Stir in the melted cheese with almond flour, garlic powder, salt, and chili powder.
  • Add freshly ground black pepper to taste.
  • Knead the contents with your hands until a smooth dough forms.


Step 3: Cut and Roll the Dough

  • Put the dough between two parchment paper sheets.
  • Shape the dough into a rectangle 1/8 inch thick.
  • Cut the dough into triangles with a knife or pizza cutter.


Step 4: Cook the Chips

  • Put the chips on baking pans coated with paper.
  • Bake 12 to 14 minutes, or until the edges are brown and beginning to crisp.
  • Sprinkle with more salt right away; then move to a wire rack to cool totally.

  • Roll the dough uniformly and thinly, about 1/8-inch thick, for the crunchiest chips.
  • Let the chips cool on a wire rack to prevent moisture.
