- 2 cups shredded low-moisture mozzarella
- 1 cup almond flour
- 1 tsp garlic powder
- 1 tsp kosher salt, plus more for seasoning
- 1/2 tsp chili powder
- Freshly ground black pepper

Step 1: Melt the Cheese
- Set the oven to 350°F.
- In a heatproof bowl, microwave the shredded mozzarella in 30-second intervals, stirring between each, until melted—about 1 minute 30 seconds.
Step 2: Prepare the Dough
- Stir in the melted cheese with almond flour, garlic powder, salt, and chili powder.
- Add freshly ground black pepper to taste.
- Knead the contents with your hands until a smooth dough forms.
Step 3: Cut and Roll the Dough
- Put the dough between two parchment paper sheets.
- Shape the dough into a rectangle 1/8 inch thick.
- Cut the dough into triangles with a knife or pizza cutter.
Step 4: Cook the Chips
- Put the chips on baking pans coated with paper.
- Bake 12 to 14 minutes, or until the edges are brown and beginning to crisp.
- Sprinkle with more salt right away; then move to a wire rack to cool totally.
- Roll the dough uniformly and thinly, about 1/8-inch thick, for the crunchiest chips.
- Let the chips cool on a wire rack to prevent moisture.
- Keep in an airtight jar at room temperature for up to one week.
