[Recipes] Cucumber Sushi – A Refreshing, Low Sugar Snack You’ll Want Every Day

Ingredients
For the Sushi:
- 2 medium English cucumbers, halved
- ¼ avocado, thinly sliced
- ½ red bell pepper, seeds and ribs removed, thinly sliced
- ½ yellow bell pepper, seeds and ribs removed, thinly sliced
- 2 small carrots, thinly sliced
For the Dipping Sauce:
- ⅓ cup mayonnaise
- 1 Tbsp sriracha
- 1 tsp soy sauce
Instructions
Step 1: Prepare the Cucumbers
- Use a small spoon to carefully scoop out the seeds from the center of each cucumber half, creating a long hollow tunnel.
Step 2: Fill the Cucumbers
- Gently press avocado slices into the hollowed cucumbers.
- Using a butter knife or spoon, layer in the bell peppers and carrots until the cucumbers are fully stuffed.
Step 3: Mix the Dipping Sauce
- In a small bowl, whisk together mayonnaise, sriracha, and soy sauce until smooth.
Step 4: Slice & Serve
- Slice the stuffed cucumbers crosswise into 1-inch thick rounds.
- Arrange on a platter and serve with the dipping sauce on the side.
TIPS
- For optimal results, use English cucumbers as they are firmer, less liquid, and don't require peeling.
- For more diversity, feel free to switch or add various fillings such mango, radish, cabbage, or perhaps smoked salmon.
- Try Greek yoghurt in place of mayo for a lighter dip.
