[Recipes] Strawberries 'n' Cream Granola Bars – Homemade Healthy Granola Bars You'll Crave Daily

Ingredients

For the Granola Bars:

  • Cooking spray
  • 2 cups (180 g) old-fashioned rolled oats
  • 1 cup (55 g) unsweetened large coconut flakes
  • 1/4 cup raw, hulled pumpkin seeds (pepitas)
  • 2 Tbsp unsalted butter
  • 1/3 cup (70 g) packed brown sugar
  • 1/4 cup honey
  • 1 tsp pure vanilla extract
  • 1/2 tsp kosher salt
  • 1 large egg white
  • 1 cup (30 g) crushed freeze-dried strawberries, plus more for topping

For the Yogurt Glaze:

  • 1 tsp gelatin powder
  • 2 1/2 tsp lukewarm water
  • 1 cup (115 g) powdered sugar
  • 2 Tbsp Greek yogurt


Instructions

Step 1: Preheat and Prepare the Pan

  • Place racks in the upper and lower thirds of the oven. Heat to 400°F.
  • Using cooking spray, grease an 8" baking pan, cover with parchment paper, and spray the parchment, leaving an overhang.


Step 2: Toast the Dry Ingredients

  • On a separate big rimmed baking sheet, spread coconut + pumpkin seeds; on the first, spread oats.
  • For coconut, bake for 10 minutes; for oats, 14 minutes, turning and tossing halfway through.


Step 3: Get the Wet Ingredients Ready

  • Lower the oven to 325°F.
  • In a big microwave-safe bowl, heat butter until melted, roughly 30 seconds.
  • Whisk in brown sugar, honey, vanilla, and salt until mixed and sugar dissolves.
  • Whisking vigorously until well mixed, add egg white.


Ingredient Combination: Step 4

  • Fold the butter mixture into the toasted oats, coconut mixture, and freeze-dried strawberries.
  • Using the back of a spoon, transfer to the prepared pan and compact a little.
  • Bake till golden, 24 to 28 minutes.


Step 5: Slice and Cool

  • Allow the pan to cool totally on a wire rack.
  • Use the parchment overhang to move the bars to a cutting board. Cut into twelve bars.


Step 6: Make the Yogurt Glaze

  • Sprinkle gelatin over water in a microwave-safe basin and let it hydrate for five minutes.
  • For five seconds, microwave on high, mix, and then repeat until the gelatin is completely dissolved.
  • Whisk until smooth using Greek yogurt and powdered sugar.


Step 7: Glaze the Bars

  • Drizzle the yogurt glaze over the cut bars.
  • Add more crushed freeze-dried strawberries to sprinkle.
  • Allow at least 30 minutes for the glaze to set.
