[Recipes] Taco Night Popcorn – A Crunchy, Low Sugar Snack Twist on Taco Tuesday

Ingredients
- 8 cups popcorn (from about ¼ cup unpopped kernels)
- 4 Tbsp unsalted butter, melted
- ¼ cup crushed Doritos (preferably Nacho Cheese, or any favorite flavor)
- 1 Tbsp chopped fresh cilantro
- Juice of 1 lime
Instructions
Step 1: Pop & Prep
- Using your chosen technique—air-popped, stovetop, or microwave—make roughly eight cups of popcorn.
- In a little basin or saucepan, melt the butter.
Step 2: Popcorn Seasoning
- Toss the warm popcorn with the melted butter in a big bowl until evenly coated.
Step 3: Flavor is added
- Add lime juice, chopped cilantro, and smashed Doritos.
- Mix all components until well blended.
- Crush the Doritos in a food processor or inside a zipped bag with a rolling pin for optimal results. A fine crumb will help it stick better.
- Butter makes the Dorito crumbs stick; don't skip it!
